Winemaking Sulfur Testing
Some advanced winemakers like to test and adjust the sulfur level (free so2) of their wine during the bulk aging process or just before bottling so that it can be adjusted to give the wine a maximum amount of shelf life. Grape and Granary sells two kits to test the free so2 level.
The first is the Chemetrics Titrets done by titration and works with white wines. The second methed is the Accuvin Free so2 test kit. It is also done by titration. Wines that have a so2 level of 30-80 ppm (depending on pH) at bottling have better shelf life and are less prone to oxidation over time.
