Winemaking Wyeast Mead Yeast

Wyeast lab produces two often used liquid strains of yeast for meadmakers. Wyeast produces the 'Dry Mead' yeast which produces dry mead (not sweet) because it has a high level of alcohol tolerance (18%). Wyeast also produces a liquid 'Sweet Mead' yeast. It can produce a sweet mead because it has a lower alcohol tolerance (11%).  So, as long as the meadmaker produces a must that can potentially produce more than 11% alcohol, the yeast will die off leaving behind residual sugar and a sweet tasting mead. We recommend starting with a specific gravity of around 1.095. 

Be sure to add a good yeast nutrient such as Fermax or Yeast Energizer to insure a good fermentation.
