Winemaking Demijons

Demijons are Italian made carboys generally made in either a 14 gallon (54 liter) size or 9 gallon size (34 liter). They are set into a basket and generally used as a secondary fermenting vessel (bulk clarification, aging and storage). It is never a good idea to remove the glas from the basket.

They are large and quite heavy when full of wine so the basket incorporates a couple of handles so that it can be lifted. We recommend a drilled rubber stopper and airlock for the top of the demijon.
