White Labs Saccharomyces "BRUXELLENSIS" Trois. This Belgian strain, used traditionally for wild yeast-like fermentations, produces a slightly tart beer with delicate characteristics of mango and pineapple. Can also be used to produce effervescence when bottle-conditioning.
