As a beginning homebrewer, plastic fermenting pails with sealable lids are a great way to get in to the hobby of homebrewing. They are they are effective and fairly inexpensive. When choosing a plastic fermenter, be sure that it is marked as HDPE (high density poly) which is a food grade plastic that will not leach oils in to the beer. You also want to make sure that the pail is at least 10-20% larger than the batch size your are brewing. If you are making a one gallon size batch of beer, use a 2 gallon fermenting pail. If you are brewing a five gallon batch of beer, use at least a 6.5 gallon primary fermenting pail.
Having a sealable lid will help keep out beer spoiling microorganisms and allow you to judge to rate of fermentation allow allow you to tell when the primary fermentation is finished. Also having graduation marks on the fermenter will help you judge volume and make it easier to make the batch the correct size. All of the plastic fermenters we sell are graduated. Our favorite plastic pail style fermenter is the 8 gallon plastic fermenter found here.
Another option for a plastic primary fermenting vessel is a 6 gallon Fermonster or a 7 gallon Fermonster. Fermonsters are larger than the typical five gallon batch size so that they can allow for foaming. They are transparent so it is easy to see the fermentation process. They are light, won't break and can be fitted with a bottling spigot. They also have a large opening for easy cleaning.
Make sure to put an airlock in your lid and fill the airlock 1/2 full with water to create an airtrap and allow the fermenting gasses (co2) to escape.
