Ideal for red or white wines which mature repidly with beaujolais type fruitiness and for bigger reds requiring aging. Low foaming, low sulfur production over a broad temperature range. Recommended for: Cabernet, Red Varietals, Gamay Beaujolais, Zinfandel, Rhone, Burgundy, Pinot Noir. Flocculation: medium-high, alcohol tolerance: 14%, residual sugar: 0-0.35%, 55-90 deg. F.
