Any general thoughts or experiences on fermenting lager recipes with ale yeasts? I don't have a fridge for fermenting, and I'm thinking about the Vienna Lager or the pre-prohibition pils.
Use Wyeast 2112 which is a lager yeast which ferments clean even at ale temps. I have also had good results with 2124 at ale temps.
