Belgian Abbey Dubbel is a deep reddish, moderately strong, malty, complex Belgian ale. The malt bill contributes flavors of chocolate, caramel, and toasted notes. Belgian dark candi sugar is used to increase the alcohol content and add to the complexity without leaving the beer cloyingly sweet.
Moderate fruity esters provided by the yeast stain contribute raisins, plums, and sometimes dried cherries. Spicy phenols and higher alcohols are often present. The bitterness level is medium. This Beer will require some ageing due to the higher alcohol content. Commerical examples Chimay Premiere (Red) and Westmalle Dubbel.
The kit includes 6.6 lbs of malt syrup, 1 lb dry malt, 1 lb belgian candi syrup, steeping grains, steeping sock, pellet hops, priming sugar, Safbrew Abbaye dry yeast, Whirlfloc Tablet, and instructions. It require a 45 minute boil and makes 5 gallons. If you prefer to use liquid yeast we recommend Wyeast #1214. Anticipated SG 1.068, SRM 20, IBU 26 and 6.8% ABV.
