You really don't have to do a 2 stage though.

I very rarely do a 2 stage.
I usually leave my beer in the fermentor for 14 days.
By the time I'm ready to keg, It's crystal clear and ready to drink.


I just sit back Relax and Not Worry and Have a Homebrew :)

I agree, John....

I've had beers do that a few times.
Even when kegged and cold conditioned.

If that yeast wants to start up again, It will no matter how cold you get the beer.
I've seen this happen a few times with Ale strains more than Lager.

I can tell you first hand. I exclusively Batch Sparge. I use a 48QT Igloo Ice Cube and SS Metal Braid (Toilet Braid) to Lauter. I typically see 75% to 80% efficiency. Real high temps will also cause some strains to eat and make more alchol and other by products.

Some of this may require extended aging times.
Also some cold conditioning can help.

Luckily September is almost here and with it cooler temps.

Star San is the way to go..
It's not as expensive as you may think.

I bought a 32oz Bottle 3 years ago, I still have a quarter of a bottle.
The stuff is great, I've not had an infected anything since the first bucket full...

I'll also add that it isn't complicated or rocket science to make a good Lager beer. Patience and time will be your friend. It's also not hard to do a D-Rest if you need to by the style. Problem that you may run into is, If your connections aren't tight or you have a leaking keg...

I always double check connections and make sure my seals are good. :)

I agree with John... With a Beer like say, Alt Bier you will want at least two weeks of Initial fermentation at Lagering Temps. Aging between 2 weeks to 1 Month in a cold Keg.
