Vinegar Quantity

I would like to make a 1 gallon batch of red wine vinegar. How much Mother do I need? On most of the vinegar making sites the recipe calls for 8 oz of mother and 16 oz of wine. Is there a way that I can use 8 oz of mother with 1 gallon of wine?

You could try it but I would not recommend it. If you wanted to make 1 gallon you would really want to at least triple the amount of mother added to get the mother formed across the top of the wine so it does not oxidize and the mother can form quickly.

John, Is there a way that you can begin with a 1 part mother to 2 parts wine, then add wine as the mother gets larger and begins to shape up like a pancake? Or do you just make small batches time after time after time?

As the mother grows you can add more wine. if you use the same container, use a hose that sits below the mother and rises about the vinegar level. Then pour wine down the hose so it fills gently under the mother. You don't want to disturb the mother. Otherwise, once you build up a bunch of vinegar, use that to add to new wine in larger proportions to make a larger batch.
