Cleaning and Sanitation

John, I received a wine making kit for Xmas and have made a batch already. As I continue the craft, I seem to have more and more questions. The kit came with easy clean, no sulfite cleaner. As I learn more there seems to be a difference between cleaning and sanitising. Should I be using the easy clean to clean everthing, then a solution of potasium metabi sulfite to santize, then rinse? For the first batch I only had the easy clean and only used that to clean/sanitize my equipment, bottles, etc. Please advise and thnaks in advance

The ez clean is both a cleaner and a sanitizer even though it is not labeled as such. Either use ez clean, Iodophor or sulfite but you do not have to use a combination. Just one will do. Knock any crud loose with a sponge or brush first then hit it with one of the above sanitizers and you are good to go. I like the iodophor but it is personal preference.
