maple sap wine

Any good maple sap wine recipies out there that anyone would like to share? I tapped my maple tree tonight about 2 hours ago and I already have about half a gallon in my bucket. Some folks where I work tell me it makes great wine so I thought I would give it a try. I was also wondering if the brewers yeast that they sell in the grocery store would work very good for making wine.

I don't have a recipe for this but you may find one on jack kellers wine recipe page. If you google 'jack keller wine recipes' it should come up. I would use regular wine yeast and not bakers yeast. The flavor difference is significant.

Please let me know. It sounds very interesting! You will likely need yeast nutrient to get it to ferment well and acid blend to make it balanced.
