I just received 30 gallons of fresh juice and I mixed in 1/4 tsp of Potassium Meta per gallon to stop wild fermentation. The problem is that as the juice warmed fermentation has started. Should I be adding more SO2 or is it safe to add my yeast (Lalvin 71B1122) and hope the "good" yeast will take over?
