CHILEAN WINE

Postby adamb13 » Sun Aug 14, 2011 3:20 pm

I have a question. I've made if based the primary ferment, secondary ferment and it's been three months in the tertiary fermenter. I will not be chillproof or filtering the wine. I was hoping to bottle today. When I went to transfer to the wine bottles for corking the wine bubbled as if it was still fermenting. So I racked the wine one more time into a 5 gallon carboy capped by a airlock stop. What do I need to do to finalize this batch and get it ready to bottle?

Did you add an Malo-lactic culture to it at the end of the primary?

Your wine is likely going though a natural malo-lactic fermentation. Don't bottle it till it is finished. I would give it another month to be safe. In the future I would recommend adding an ML culture at the end of primary to speed up the process.

thanks
