Grain 1: 5 lbs German Wheat Malt

Grain 2: 3 lbs German Pilsner Malt

Grain 3: 8 OZ German Vienna

Grain 4: 8 OZ German Crystal Malt Light (20 deg L)

Grain 5: 2 OZ Belgian Chocolate Malt

Hop Schedule: 90 Minute Boil

Bittering Hops: 4 HBU Hallertau or Tettnang (60 Min)

Flavor Hops: none

Aroma Hops: none

Yeast Strain

Strain: #3068 (More spicy) #3056 (Less spicy)

 

              Mash and Ferment Schedule

Mash Water Qty and Strike Heat: 3 Gallons at 137 deg F

Protein Rest: 30 Min at 131 deg F

Sacrafication Rest 1: 153-155 deg F

Mash Out Time/Temp: 168 deg F for 5 min

Sparge Water qty and Temp: 5-6 Gallons at 168 deg F

Primary Ferment Time and Temp: 5-7 days at 60-68 deg F

Secondary Ferment Time and Temp: 1 week at 35-45 deg F

Priming: 1 Cup DME or Force Carbonate to 3 Volumes
